Let's face, pancakes are life! Pancakes are an American iconic meal that i remember growing up with and always wanting more. And oh my goodness, these healthy protein pancakes hit the spot. You guys are going to go crazy over how insanely good these health protein pancakes. And they are also really simple to make, which has made them a reoccurring breakfast around here.
My wife is a pancake-a-holic. She grew up eating pancakes and bacon most of her childhood. It was only a matter of time before I had to come up with a healthy pancake recipe that the family could enjoy. And this recipe hits that spot. The best thing about these protein-packed healthy pancakes is their versatility. Chocolate chips may be added to the recipe if you are like my wife, son and daughter, who love chocolate. Or if you are similar to myself, you can add in blueberries. Regardless of what you add into this recipe, you will love it!
Sugar free and packed with protein
If you are like me, the problem with pancakes is that they leave you feeling hungry within an hour of consuming them. The problem with most pancakes is they are loaded with sugar and have no protein. This combo typically leaves many people hungry.
This recipe flips that idea upside down. The fluffy protein pancakes don't need added sugar because they get their flavor from the protein powder and Greek yogurt. Additionally, these fluffy protein pancakes are gluten free since they use oats as a base instead of flour. If you suffer from Celiac Disease or gluten intolerance, then this recipe is for you. Just make sure that you use a protein powder and oats they are gluten free.
Tips for customizing your fluffy protein pancakes
Fluffy protein pancakes are great because you can top them with a variety of toppings to suit your mood and lifestyle. Some of my personal favorites are Nuts N More high protein peanut butter, Lily's Chocolate Chips , blue berries, bananas, maple syrup, and whipped cream. But healthy protein pancakes with whatever toppings you want.
What kind of protein powder should I use?
The protein powder is a very important part of this recipe, so using the right one is key. I personally would recommend a whey/casein blend. In my years of cooking with protein powders, these tend to provide the best results. The casein protein will help add the creaminess. The brand I recommend the most is PEScience , and I am not even sponsored by them. You can use their vanilla, cake pop or snickerdoodle flavors for this recipe. What kind of yogurt should I use?
I generally recommend using your favorite Greek yogurt. But I would mention that the creamier it is, the better the recipe will come out. I personally use Oikos Triple Zero Vanilla Greek yogurt. The additional fiber is a bonus.
So instead of belaboring this, let's make some pancakes!
Fluffy High Protein Pancakes
135g of oat flour or blended oats
4 eggs
1 scoop of vanilla protein powder
120g vanilla greek yogurt
⅓ almond milk
1 tbsp baking powder
1 tbsp sugar free syrup
1 tsp cinnamon
Directions: Pre-heat a griddle to 350°. Add in all the dry ingredients into a bowl and thoroughly mix. Add all the wet ingredients to the bowl and mix everything together. Spray the griddle with cooking spray and add enough batter to make a 4” pancake. Repeat the process about 7 more times.
