Easy homemade pasta sauce there to spice up your life
I am not sure about you, but when I was growing up, pasta was a go-to meal for my mother. And I can't blame her, because with two growing and very active boys, it was easy to go through a box in a single serving. But just like most kids of non-Italian grandmothers, the pasta sauce was from a jar.
Now that I have started to make my own creations, making a healthy homemade pasta sauce was the top of my list of things to accomplish. And the best part of this recipe, it is high in protein, low in calories and super simple to make! For my family, simplicity is a key ingredient to making a delicious and healthy meal.
And to bring up this healthy homemade pasta one extra step, it is only made with a few ingredients, many of which should already be in your kitchen.
So instead of belaboring this, lets make some sauce!
Penne with homemade red sauce ingredients:
6 Servings of Barilla Penne (I prefer the protein plus) or your favorite GF Pasta
1 carton of cherry tomatoes
1/2 Sweet onion
1/2 shallots
3 garlic cloves
1 tbsp dried parsley
1/2 tbsp dried basil
2-3 tbsp olive oil
1 tsp salt
Cracked Pepper
Pecorino Romano
Directions: Add olive oil to a large pan. Once hot, add in onions and shallots. Make sure you stir frequently to ensure they don't get burnt. After 3-4 minutes, add in the garlic and cook for another 1 minute. Once you get a good color, add salt.
Add in the carton of tomatoes and add a lid. Cook for 3-4 minutes or until the tomatoes are able to pop. Use a potato masher to smash the tomatoes. Cook for about 5 minutes. Add parsley, basil and cracked pepper.
Once cooked, add in about 2 - 3 tbsp of Pecorino Romano cheese. Add it to Penne pasta and serve.
