The recipe for these crispy roasted potatoes doesn't require much to make them taste amazing, which is one of the reasons I use it so often. Here is what you’ll need to make these crispy Parmesan roasted red potatoes:
Small bag of red potatoes (halved)
Olive or avocado oil
Paprika
Garlic
Salt
Cracked blacked pepper
Italian Seasoning
Parsley (fresh or dried)
Grated Parmesan
What are the best potatoes?
Ultimately, it comes down to what kind you like or have available. I personally, love red potatoes or will get a mixed bag of baby potatoes. They are easily cut in half and used for this recipe. If you want to, pick up your favorite potato (red, Yukon, Russel) and cut it into 1" cubes. Make your cubes uniform in size so they cook evenly.

1.5 lbs small bag of red potatoes (halved)
½ tbsp olive or avocado oil
½ tbsp paprika
¼ tsp garlic
¼ tsp salt
¼ tsp cracked blacked pepper
¼ tsp Italian Seasoning
½ tbsp parsley
2 tbsp grated Parmesan
Directions: Preheat oven to 425°. In a small bowl, add in paprika, salt, and pepper. Place halved potatoes in a large bowl and top with oil. Generously coat the potatoes with the dry rub and mix. Mix in the parsley, Italian seasoning, and parmesan cheese after the potatoes have been thoroughly coated. On a baking sheet, add a piece of aluminum foil and spray with nonstick. Even place potatoes on the baking sheet and put in the oven. Cook for 35-40 minutes.
